Ingredients

• 3 Eastern Rock Lobsters
• 1 Celery Stalk finely chopped
• 2 tbsp Fresh Lemon Juice
• 1 tbsp Fesh Chives (Chopped)
• 3 tbsp mayonnaise
• Black Pepper Freshly ground
• 6 Hot Dog buns
• 2 tbsp Unsalted Butter

Instructions

1. Crack Lobster shells
2. Pick meat from tail and legs
3. Cut Lobster into half inch pieces
4. Mix Lobster, Celery, Lemon Juice, Chives and Mayonnaise in a bowl
5. Season with Salt and Pepper to taste
6. Spread flat sides of Hot Dog buns with butter and cook until golden (about 2 mins per side)
7. Fill buns with Lobster mixture and serve
